'Yufka' is fresh dough rolled out by hand in a very thin, round shape using a dowel. Yufka is used in sweet and savory pastries and layered pies.
In Turkey, you can buy yufka sheets made fresh daily at most local bakeries, or from shops that only sell yufka. You can also make your own yufka. All you need is some flour, water, a long wooden dowel and a lot of elbow grease!
Yufka should not be confused with phyllo, which is very thin, often machine-made and has many layers. Phyllo is mostly used in baklava recipes.
